The Bikini Cocktail

Yields 10 servings

To make the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Drink (makes 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Combine the listed components into a pan, heat until it reaches a simmer, stirring until the sugar dissolves. Next, turn off the burner and leave to reach room temperature entirely. Decant to a clean bottle, close it and store in the refrigerator, where it will keep for up to a month.

For the Premix: Pour every spirits and syrup into one sizeable container, let it rest for an hour, then strain preferably using muslin, making it completely strained.

When ready to serve: Pour 85ml from the batch mix into your stirring glass containing ice, and agitate carefully for one minute until cold. Filter into a frosted cocktail glass or a similar vessel, garnish with the cranberries adding the final touch by giving it a light spray of mandarin oil above the glass.
